Fava beans are a great favorite of ours at Lesedi Farms. This incredibly versatile legume makes the perfect dip or spread.
WHAT YOU NEED
1 ½ cup fava beans 4 cloves garlic 2 scallions coarsely chopped 2 tbs cilantro coarsely chopped 2tbs parsley coarsely chopped 1/3 cup olive oil ¼ cup lemon juice 1 ½ tsp cumin 1 tps sea salt ¼ tps Black pepper, paprika ½ cup Thai basil, (or African mint- it is purple with stronger flavor)
HOW TO MAKE IT
Wash beans thoroughly and rise them. Stove top: Add fava beans and 2 cups of water to a small pot and boil for 15 minutes. Turn down heat and simmer for 1 hour or until beans are tender. Drain beans and set aside. Pressure cooker: Add beans and 2 cups of water and cook for 20 minutes. Drain beans and set aside.
In a food processor add cilantro, parsley, basil, mint, garlic, lemon juice and scallions. Process and then add beans and olive oil. Process until smooth, adding more oil or water as needed. Add salt to taste.
Serve with raw veggies and pita bread, or add to sandwiches.
